I began this day with a little more enthusiasm. After the success of the spicy green beans I made for dinner the night before, I felt motivated and more fulfilled than the first day. It’s a beautiful thing to realize that something can be made out of nothing.
Day 2 Dinner–Tofu Burger and Curry Chips
After starting my morning with my first and last cup of coffee, though, I wanted more. But I powered through and left for my job as a personal grocery shopper and headed to Trader Joe’s.
The snacks given at Trader Joe’s where I work as a personal shopper. I usually don’t eat the samples but I was hungry!
There’s nothing like being surrounded by aisles of food to make you realize what hunger really is. I headed straight to the free samples on this day and managed to eat only one cracker with goat cheese and herbs. To make it worse, throughout my day around San Francisco, the sights and smells were taunting me. What a terrible city to be in for a food challenge!

After my day at work, I was famished. I realize now that the only way to survive this lifestyle is to plan ahead. If I hadn’t prepared some foods ahead of time, I would’ve gone hungry for much longer.
But I was determined to feel happy and satisfied with what we had in the house. I spent a while working on a great idea for dinner and ended up making Tofu burgers (my own recipe) and curry chips from Isa Does It, vegan cookbook.

2 homemade Roti stuffed w/ rice, sauteed zucchini, onions, tomatoes and topped w/ avocado

At the end of our second day, I decided to check out my list of purchases again and to see what meals I’d make for the rest of the week and the most amazing thing happened–I found more money in our budget. I planned to go to the Civic Center’s Farmers Market with this extra dough but something amazing happened! Stay tuned to find out……
